The Vada
Vada, one of the most famous south Indian savory fried breakfast, the recipe included urad dalĀ ( black gram) soaked overnight, de-skinned and ground to a batter seasoned with ingredients such as cumin, green chilies, black pepper, curry leaves. The paste is shaped into balls and deep fried resulting in vadas with a crispy skin and fluffy centre. Vadas are often eaten as snacks or as an accompaniment to another dish in restaurants, served with sambar and coconut and mango chutney. It is also known as uzhunnu vada.
