HALLOWEEN STYLE PEPPERS STUFFED AND MODELLED.
These peppers in the picture really seem to be trying to tell a story with the green one giving envious looks at the yellow one but that is just co-incidence. This recipe is a fun one if you have children in the house and is easy to make – if you are all adults of course you can still indulge in the increasingly popular event of Halloween without a doubt! Preheat oven to gas 6 or 200c . Top three orange/yellow peppers and 3 green ones leaving stalks on and scooping out the seeds.
Using a sharp small kitchen knife cut two eyes and a mouth in each pepper in a triangle for the eyes and nose and squares for teeth. Put any faces you fancy on ALL your peppers.
Cook enough rice to stuff your peppers – you can buy 2 x Golden Vegetable rice in 250g packs from Tescos if you shop there, add 250 gms mozzarella and chopped parsley and basil when cookedthen spoon into the peppers. You can also add some cooked finely chopped mushrooms to the mixture and/or vegetable court bouillion which goes very well with all vegetable dishes using rice, or in soups. Another addition could be finely chopped tomatoes or a tin of chopped ones.
Replace the pepper tops and drizzle or brush with oil. Cook on a greased baking tray in the oven for 25-30 mins, though keep an eye on your peppers from 20 mins onwards until tender. If you want your peppers to look more Halloweeny put a cocktail stick through each pepper with a black olive on each end.
Non-vegetarians can enjoy this dish with a fillet of meat or any type of sausage. Fishitarians can enjoy fish with it and veggies can have a slice of Pitta ladelled with homous or some mashed potato.
