The main protein in milk Casein, binds to the stain causing tannins in tea and stops them turning teeth brown, according to dentists from the University of Alberta’ s School of Dentistry. The tea is the second most consumed drink in the world, and the way it’s processed affects how teeth are stained, according to Dr Ava Chow of University of Alberta’s School of Dentistry. The more Tea is processed or oxidised the higher its staining properties are. They are dark in colour and can stain the teeth. Casein from Latin caseus, “cheese” is the name for a family of related phosphoproteins (αS1, αS2, β, κ), and contains amino acid and is known for slow digestion, and anti-catabolic effect. These proteins are commonly found in mammalian milk, making up 80% of the proteins in cow milk and between 20% and 45% of the proteins in human milk.
