Summer cocktails to cool off in the sizzling summer
WATERMELON-TEQUILA COCKTAILS
When watermelon is in abundance, this is a great way to use it. Bobby Flay purees seedless watermelon chunks, then strains the juice through a sieve and mixes it with silver tequila, sugar syrup, blueberries, mint and fresh lime juice.
TO SERVE 8
• 1/4 cup water 1/4 cup granulated sugar
- 8 cups diced seedless watermelon (1 pound)
• 1/4 cup fresh lime juice
• 3/4 cups blueberries
• 3/4 cup lightly packed fresh mint leaves plus 8 sprigs for garnish
• 1 1/4 cups tequila
• Ice
CUCUMBER-HONEYDEW FREEZE
Fruit flavours generally mix well if they’re from the same botanical family. This cool and light summer cocktail works because cucumber and melon both belong to the Cucurbitaceae family.
TO SERVE 6
•1 lime wedge
• 8 ounces gin
• 2 cups chilled chopped peeled cucumber
• 2 cups chilled chopped honeydew melon
• 6 ounces fresh lemon juice
• 1 cup of honey
• 5 cups ice

This is the perfect summer cocktail with the combined infusion of vodka and strawberry. The ideal combination to cool down in the heat

•3 pounds strawberries, hulled and coarsely chopped
• 2/3 cup sugar
• 1/2 cup plus 2 tablespoons citrus vodka
• 1/4 cup fresh lime juice Ice
• 1/3 cup chilled Riesling
CAJUN LEMONADE
A salute to the flavours of New Orleans, this cocktail spices up Napoleon House’s Pimm’s Cup (Pimm’s No. 1, lemonade and 7-Up) with a splash of Tabasco and a generous dose of rum or vodka

•12 ounces white rum or vodka
• 4 ounces Pimm’s
• 8 ounces fresh lemon juice
• 4 ounces Simple Syrup
